Delicious (and Gluten-Free!) Coconut Macaroons are Perfect for Passover

Try this easy recipe for Passover macaroons that are also gluten-free.

Did you know that baking your own Coconut Macaroons is incredibly easy? In under 30 min and with only five ingredients you can whip-up your own batch for the upcoming holiday. Even if you don't celebrate Passover, these gluten-free treats are a perfect afternoon sweet fix.


What You'll Need:

Makes 30 macaroons

  • 4 egg whites, large
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • Shredded coconut, toasted


Step 1: Preheat oven to 350 degrees F. In a mixing bowl, whisk together the egg whites, sugar, vanilla extract and almond extract. Whisk vigorously until frothy.


Step 2: Fold in the shredded coconut. Mix until well combined.


Step 3: Using slightly wet hands, form the mixture into 1-inch balls. Place on a parchment-lined baking sheet. Alternatively, you can use an ice cream scoop. Bake for 20 minutes or until bottoms are a deep golden color. Allow the macaroons to cool completely before serving or storing.


Tip: If you can't find pre-toasted coconut, you can easily toast it yourself by spreading out the flakes evenly on a baking sheet and baking in a preheated oven for about 2 minutes, or until lightly golden. You can also use a more coarsely shredded version of coconut. Great variations are with chocolate chips!
